Inside Wales’ first contemporary art hotel, where a converted 1806 windmill houses Twr y Felin on the edge of St Davids, Blas Restaurant earned its three AA Rosettes in March 2022. The name translates as ‘Taste’ in Welsh, a clear declaration that the kitchen delivers through creative seasonal menus showcasing Pembrokeshire’s coastal and agricultural richness. Inspired by Twr y Felin’s original vision, the restaurant reflects the hotel’s contemporary art style: dishes are presented as art on plates, with refined and experimental presentation, bold yet balanced flavours, and this is hotel dining like no other.

The dining room awakens the senses in a unique way. Mood lighting creates a calming atmosphere, while bespoke handcrafted furniture grounds the space. Specially commissioned artworks from Welsh, British, and international artists are displayed throughout. The ambient setting reflects the windmill’s simplicity, elegance, and history, while contemporary styling prevents any sense of stuffiness. The atmosphere is ideal for serious dining without being overly formal, and the friendly team provides service with pride, enhancing rather than overpowering the experience.

Head chefs Gareth Evans and Dan Slipakiv champion local seasonal produce, mainly sourced from Pembrokeshire and Welsh suppliers. Daily catches of lobster, crab, and various fish species arrive from the surrounding seas. Welsh-farmed lamb features regularly alongside locally foraged sea herbs and wild garlic from the countryside, creating hyper-seasonal ingredients that firmly root dishes in the landscape. The pared-back modern cooking style allows quality ingredients to speak for themselves.

Open daily for;

  • Lunch (12-3pm)
  • Afternoon Tea (2pm-4.30pm), and
  • Dinner (April to October: 5.30pm to 9pm, with the last table seated at 9pm; November to March: 6pm to 8pm, with the last table seated at 8pm), excluding the festive season.

Booking is essential. Available to non-residents and guests from sister properties, Roch Castle and Penrhiw Priory.

Please note that between 4th January and 31st March 2026, Blas Restaurant will be closed for lunch, afternoon tea, and dinner due to our kitchen renovation. Breakfast services will continue as usual, and dinner will be available on selected dates at our sister venue, Penrhiw Priory.
