Deep within the 9,000-acre Fonthill Estate in southwest Wiltshire, Witchmark Distillery occupies a Grade II listed barn that has stood since the 1600s. The setting immediately sets the tone. This is a working distillery shaped by land, history and time, not something dropped into the countryside for effect.
The name comes from the medieval witch marks carved into the estate’s stone buildings, six-petalled symbols once believed to protect against harm. Many are still visible today, etched into the fabric of the barns alongside Marian marks invoking protection. One of the estate’s former grain drying barns now houses the visitor centre and shop, a striking space where those markings sit quietly alongside modern distilling equipment.
Witchmark’s ambition is clear but deliberately patient. The distillery is laying foundations to help establish English whisky as a category worthy of international attention, even though its first single malts will not be released until several years after production began. In the meantime, the focus is on doing things properly from the start.
Unlike most distilleries, Witchmark produces its own neutral grain spirit from scratch. Barley grown on the Fonthill Estate using regenerative farming methods is malted separately at Warminster Maltings to preserve provenance, then distilled on Italian-built copper stills by Frilli. Water is drawn from a nearby aquifer, naturally filtered through chalk and limestone, giving a clarity and character that carries through every spirit produced.
That malted barley note is evident across the range, from the Wiltshire Single Origin Gin to the Black Lime expression, alongside English vodka and new make spirit destined for whisky maturation. Sustainability runs through the operation without being performative. A large solar array supplies power, stills run on recovered bio-liquid propane gas, and spent grains are fed into local anaerobic digesters. The distillery is a certified B Corp, working towards becoming England’s highest-scoring distillery.
Visits are by appointment and thoughtfully paced. Tours include tastings, while gin-making experiences allow guests to design recipes and distil their own spirit on copper stills, taking a bottle home. For those wanting to follow the whisky journey more closely, the Witchmark Club offers membership tied to the long view. This is distilling built on conviction, not shortcuts.
